How to Cook FISH MAW Soup or Kaphork Pla?

What is FISH Maw? Details from website as follows;

Fish Maw plays the role of a texture ingredient like the sea cucumber in Chinese food, fish maw is actually the air bladder of large fish, the function of which is to regulate water and oxygen flow so that the fish can ascend or descend in the water. The price of fish maw is far from cheap and it's one of the luxury ingredients in Chinese cuisine.

Like a lot of ingredients in Chinese culinary traditions, the fish maw is also regarded as a nourishing tonic that helps blood circulation and beneficial to the general health.

My fish maw soup with chicken and quail's eggs for dinner.  You will also need some sour chilly sauce and chinese vinegar too.

Fish maws are sold dried in two forms – deep fried or non-deep dried. Deep fried fish maws are puffy, light and look like a yellow sponge or pork rind. Whereas the other type is in stiff, cream-colored sheets. Most recipes that require fish maw will tell you how to prepare it and they may vary. Some requires you to simmer it while others simply soak it using cold water. Basically, all fish maw should be deep-fried before anything else. If you bought the non-deep fried one, deep fry it in moderately hot oil until it puffs up and become white. Then soak it until pliable, rinse and scrub clean. Squeeze out the excess water after the soak to remove the oil.

Repeat the soaking and squeezing process until you are comfortable with the level of its greasiness. Lastly, cut them into slices of desired size and they are good to go. If the fish maw smells fishy, you may want to deep fry it again so that it becomes fluffy and free from odor again. Alternatively, boil for 5 to 10 minutes with a stalk of scallion (spring onion) and a slice of ginger.

Prepare soup with chicken.

Boil them with star anise as well.

Add chinese mushrooms. You need to soften them before cutting them into smaller pieces.

Boil them together. Take out any extra oil.

These fish maw are boiled and squeezed before cutting them into pieces.

Add them to the soup.

Season with oyster sauce, salt, pepper, soya sauce and some dark sauce.

Add some chinese wine.

When almost done, after boiling for about an hour, you can add these cooked quail's eggs.

Add some flour to thicken soup a little.

Already done! Don't forget to take out any excess oil!

Some sour chilli sauce.

Like the sea cucumber, it takes on the flavor of surrounding ingredients it is cooked with like a sponge. Fish maw is mostly used in soups and the delicious fish maw soup is often served in the Chinese households during their New Year.

Add some chinese vinegar too!

Heavenly delicious!

This bowl can cost you about Bht.40-50 outside! Don't be jealous of us (including my inlaws)  eating them for many meals.....! Yummy!

Ian-You guessed it right. Keep the hat on.

My father in law must be Type 1. He needs two shots of insulin daily. He could be blind once due to diabeties, but laser took care of it. But all those medicine eventually got this is kidney. Now he needs hemodialysis twice a week.

As to diabetes, type 1 is very nasty, type 2 is very common, it is often called old age diabetes. Many people have it and don't even realise it. Without my science background I would just think it old age catching up.
My gf gets annoyed if I cook for myself, so I have had to teach her to cook English style.

Whats in a Burger thats so wrong.Now Pan,listen to an Expert. heres what you do first.Find that thing in the corner that Chops stuff up,Ken i think its name is.Then raid the Fridge for the Best Beef, shell an onion or two,the skins a bit tasteless.Get some of that white powder stuff and smash a few eggs into the Dogs Water Bowl,Wizz it with the drill like whatsit,then dump the Lot in Kenny who by then has mushed up the Beef.See there's your Protein.Break lumps off,bash it flat with youre Chang Bottle.Perfect Timing as you know is the secret of Good Food,so make sure the Bottle is empty,before you bash it.

Pan, don´t worry. You did a good job as a cooking instructor. The problem lies with me.
I am not a passionate cook (although I cook every day!). I normally cook only easy dishes or the dishes which allow me to play with my fantasy easily.
BTW, I like you to know one thing. Recently I tried your fried tofu dish. It was really the first time that my child enjoyed eating tofu. Thank you very much, Pan.

Iceberg-I hope you can eat something more healthy than burgers....

Yabua-I must confess, this is the first time for me too! I know how to cook it, from seeing my inlaw, but recently, it didn't turn out quite tasty. I had to end up adding this and that everytime she gives me a bowl. I thought it was easy actually. Did I leave out anything that's unclear to you?

Ian-No sweetness for this dish. Just a little salty and sour.

GG-I love bamboo shoots too. Just didn't have them at that time.

Ian,youre a Pampered Pooch.Get off yer arse when youre here and cook your own food.If you look at our Kids who copy most things i do,or did when they were young,they are thin compared to Thai Porkers.Im the same as i was at 15.In U.S.A. i hit 20 Stone in 1 year,i looked like Mr Blobby.Diabetes is scary,my first Wifes Dad died from it,slowly.

I go one step further than Iceberg, learning from Pan what goes into these meals makes me increasingly wary of eating Thai foods.
An interesting fact about Thai foodstuffs, the last 9 months living in Thailand I noticed I was becoming early diabetic,now I am back in England I am returning to normal. I eat the same food in both countries, but one is bought in Thailand the other in England, so there should be no difference. But everything here tastes less sweet, that could be the difference.

I really like it Pan. Looks so good to eat. First time I learn the true ingredients of this soup, a little bit scary I must say. But I really like this soup at the restaurant.

Thus, this is my lunch time and I hope you know what I will have for lunch, the boring burger with a glass of wine
