I'm 36 Thai, young looking mom with 11 year old sweet daughter and 2 cute French Bulldogs. I'm Thai/Malaysian Chinese. I grew up in Malaysia and came back to Thailand when I was 17.

Lazy Sunday Chopped Ham Fried Rice for Lunch

Waking up on a late Sunday morning, this was the quickest lunch I came up with!

Canned chopped ham.

Many night's leftover rice from the fridge, beaten eggs mixed with some sauce, chopped garlic and vegetables.

Cut ham into cubes and fry with little oil.

Fry until golden brown and set aside.

Pour eggs into heated pan with oil.

Add rice with chopped garlic right away.

Add salt and pepper.

Add vegetables and keep frying, turning over for about 5 minutes.

Add fried chopped ham.

Mixed them all up and ready to serve.

There you have it. Another delicious lunch on a lazy afternoon.

Another heavenly delicious dsih.

heroofthedoor-so sorry for the terrible experience eating chopped ham. I used to love it when I was in Malaysia, and now that I've introduced this to my daugther, she loves it too! I will blog up something new fast...hang on!

You have had some good dishes in the past. I had to grow up on Spam or chopped ham. I will never eat it again now that I don't have someone forcing me to eat it. Pan, put up any recipe other than chopped ham or Spam. It is gross.

S/Grad,ive seen them Blue head first in Oil Drums ready for the Grinder.My Horse Shied away,the Guy said they were for Sausage and Spam.Strange its called Pork Ham on the Tin.

Sorry to rain on pork lovers' parade, but what happyjack said is true about the sows. The process of pork production makes me want to lay off pork forever. But now I'm more relaxed and eat it regularly but in small portions--because it tastes good and available so widely.

Still it's not healthy for humans to eat as main meat, especially for children. Trust me. Or, if you don't , then research about it and you'll agree with me. (the pork meat association is going to kill me for this)

Fish especially mackerel is a much better choice--if you can stand the strong fishy smell.

Naive-I use a little bit of Olive Oil when I fried the eggs first. There's already enough oil from the fried chopped ham itself, and I don't like my fried rice too oily, as it will spoil the taste completely!

Now I got you. I know why you hated beef steak in Bangkok. I know also, as most of them tasted like Handbag with sauce.
Now when I am in the US, for 2 years, I ate alot of local food. Grilled steak was my favorite. All because of the quality of the meat and the way it was cured.
Thai food can be boring after some time for a foreigner as you do not take all the varieties due to many factors including spiciness. Thai food actually incorporated many Chinese cooking. I hope you have develop your taste bud by now.

The first year I went to Thailand, I got sick of Thai food and so my Thai friends asked if I wanted Chinese food. I said sure. We got to a Chinese restaurant and I looked through the menu. I asked my friends, "Where are the chicken fingers or the pork strips? Why don't they have crab rangoon?" My friends said, "No, that's American Chinese food, they don't have that here." I was disappointed. Luckily I brought a couple of boxes of Kraft Macaroni and Cheese so I ate that when I went back to the house. I am more used to Thai food now and can eat more spicy food than I could before so now the food in Thailand is not so bad. They did offer to bring me to KFC, but I don't eat that shit in the U. S., why would I eat it in Thailand? I get alot better fried chicken in the U. S. than what they make! Fried chicken in the southern U. S. is the best. KFC doesn't do well there either.

Fried Rice is so inrternational now that it does not matter where it originated. Fried Rice is not only a pleasant food to have, well tasty also, but it is also a philosophy in life. It is the simple ingredients and the use of leftovers that makes it great.

Alien, original Chinese fried Rice never uses soya sauce but salt and pepper. The rice have to be from yesterday as fresh rice is bad for frying. You had the American version of Chinese Food which I remembers while staying at Delaware nearly kills me.
However, I am seeing many Americans nowadays demanding for original cooking.

When I grew up, we considered all fried rice as being Chinese. Then, with the influx of legal and illegal Thai immigrants into the U.S and the subsequent explosion of Thai restaurants, we learned that there was "Thai" fried rice, which was generally better as they used less soy sauce and more vegetables. When I was in Thailand, I was offered "American" fried rice. I had never heard of it. When I told people back here, they laughed and asked "What the hell is American fried rice?" I told them that the Thai people either put hot dogs or raisons into the rice and call it American fried rice. I still like Thai fried rice and we still don't have American fried rice in America. Besides the Chinese and Thai fried rice, they do eat Spanish rice and beans here as well as "Dirty rice", Rice Pilaf and Jumbalaya. The dirty rice is similar to Jumbalaya as they throw all types of left-overs into the rice. Good Jumbalaya (a New Orleans dish) is excellent.

stalingrad-I normally just fry them in bigger pieces and eating them with plain rice is just as delicious as me frying them like this, but my rice from the fridge needs taken care of......Or you can just slice them up and place them in your oven and change sides to avoid burning!

Another great and easy dish for a lazy (to cook) guy like me.

Have always wondered about this brand of tinned ham. Are they tasty if just simply fried like you did? Does it then have a porkish smell? I'm lazy to put the rice etc. So can just eat with fried eggs for breakfast ?
